Ingredients needed:
-2 boneless, skinless chicken breasts
-32 oz chicken broth
-1 onion
-1 green pepper
-1 red pepper
-5 cloves of garlic
-1 can tomatoes with green chiles
-1 can black beans
-1 can of corn
-1 tsp salt, 1 tsp pepper, 1 1/2 tbsp chili powder
-shredded cheese and tortilla chips to top
-cook chicken in a skillet on stove top
-pull apart chicken into shredded pieces
-cut onion and mince garlic and sautee over low to medium heat
-in a large soup pot, add cooked chicken and veggies
-cut both peppers and add to pot
-drain and rinse black beans and add to pot
-drain tomatoes and corn and add to pot
-add the chicken broth with the salt, pepper, and chili powder
-turn on over medium to high heat until it starts to boil
-once boiling, turn to low heat and let simmer for atleast 30 minutes
-if the soup is too thick, add 1/2 cup water at a time until desired thickness
-serve hot with shredded cheese and tortilla chips
